NOT happy today! I had a 1.8lb gain over night! Holy cow! I dropped my coconut oil for two days, lowered my water slightly to 3 liters yesterday, and I dropped my 2nd fruit last night. hmmmm…….

I have definitely made a few mistakes. I started real HCG ony 9 days ago using 133IU 2 x daily sublingual). I decided to just go ahead and up the dosage 3 days ago to 166 IU 2x daily sublingual. It probably wasn’t the smartest thing to do. I felt tired and had a headache all day long yesterday. I woke up this morning still feeling exhausted, and the headache started again! ugh! I felt a headache after starting the real HCG, so now, I’m thinking that the higher dosage is causing this again! good grief!

I really hope that I’m not reaching immunity. boo hoo! I have about a week’s worth of real hcg left, and I don’t want to waste it. If this doesn’t pass by the end of next week, then I will be forced to go to phase 3. I’m really holding out and hoping that maybe I can make it to 70 days or so. I don’t know if that’s going to happen, though. Only time will tell!

I decided to start taking a few potassium pills today. I took one pill after lunch and one after dinner. I’ve been having a little bit of twitching in my muscles lately. It’s not real bad, but it’s kind of annoying. I’m not sure if it’s potassium or magnesium. I’ve taken some magnesium, so I’m going to try the potassium for now.

I had an awesome chili for my lunch today! I mixed my veggies! Not on protocol. oooohhhhh….. Anyway, the chili contains some chopped onion and tomatoes, lean ground beef, and seasonings. I ate it with a very small side of strawberries and a breadstick. It was such a nice change from my normal boring routine!

My weight is back down today. Yay! What a relief. I drank at least 5 liters of water yesterday as well as 2 cups of Dieter’s Tea throughout the day. I was bloated and miserable all day long. I feel great today! I’m still slightly bloated, but I think it might be a side effect of the real HCG.

I had a great lunch today. I ate 1 egg plus 2 whites. The original protocol says that you can substitute 1 egg and 3 whites, but I only had 3 eggs left. Time for another store run! LOL. I made an omelet out of my eggs and used chopped cooked onions. I ate my omelet with some strawberries sprinkled with 1/2 packet of Truvia along with my sesame breadstick. It was yummy!

Dinner was awesome! I made pan seared tilapia with some sugar-free cajun seasoning. I ate it with a green leaf lettuce salad, 2 tablespoons of Wishbone fat-free italian (15 calories *not protocol), orange slices, and a breadstick. Yum Yum!

Yay! I finally dropped a big number. It sure beats the .2 losses the past two days. I started a new bottle of HHCG a few days ago, and I am now wondering if my previous bottle lost its potency. I was starving yesterday and became tired early on in the evening. I ate a double batch of chocolate bark, and I think it actually helps my weight loss. I ate another double batch today.

I attempted to make chocolate cottage cheese pancakes today. They really weren’t that bad, but they didn’t look very good. I am going to try working on the recipe a bit until I can get a nicer looking pancake. LOL. I ate them with some baked cinnamon apples and a wasa cracker.

For dinner, I decided to have some chuck steak. I used less calories for lunch, so I splurged a little. I marinated it in some Bragg’s Liquid Aminos, and it was good. I ate it with some grilled asparagus, a sesame breadstick, and a few strawberries.

I didn’t lose any weight. I’m not surprised. Like I said before, I played tennis two nights ago. This could be my body’s way of catching up to the exercise. I’m just happy I didn’t gain weight. I also missed my 2nd dose of drops yesterday, too. oops! Good news, though! I measured myself, and I lost 1/2 an inch off my waist and 1 inch off my hips in 4 days! Hooray! The “inches” part of “pounds and inches”! I still have 4.8 pounds to go until I reach my lowest Weight Watchers weight, BUT I have officially become smaller than that in inches!!! Woo hoo! I love the way this diet works! :-)

I think this version of my cottage cheesecake is a little easier than the first version. This version adds 5 calories for the knox gelatin. The baked version adds 16 calories for an egg white. You have to bake the other version also, but you can decide for yourself what works for you!

Strawberry Topping:

125 grams of strawberries (40 calories)

1 Tbl. of Splenda (or 1 pkt of Truvia)

1/4 tsp. vanilla

Cut strawberries into small chunks.

Combine strawberries and sweetener in a saucepan. Cook over medium heat, stirring occasionally.

Strawberries and sweetener will start to melt and form a sauce. Cook for approximately 8 minutes. Remove from heat and add vanilla. Let cool in refrigerator until cheesecake is ready.

113 grams (1/2 cup) Cottage Cheese (Daisy 2%= 90 calories)

3 Tbl. Splenda

1 Tbl. lemon juice

1/2 tsp. Knox Gelatin (5 calories)

Gather ingredients for your cheesecake.

Weigh out 113 grams of cottage cheese. Blend cottage cheese until creamy. Add sweetener and lemon juice. Blend well. In a separate bowl, add 1/2 tsp. of knox gelatin to 1/8 cup of boiling water. Stir until gelatin is dissolved. Slowly pour into cottage cheese mixture. Blend until mixture is smooth and creamy. Pour into a small bowl and chill for 2-3 hours.

Using a butter knife, loosen the cheesecake by running the knife around the inside of the bowl. Place a plate over the bowl and flip over onto the plate.

So, here it is. My own version of Delmem‘s Dark Chocolate Delight recipe.

This recipe uses 2 tablespoons of coconut oil. If you are not sure if you can handle the coconut oil on phase 2 of the HCG protocol, then start off eating only half of it. Delmem has estimated that approximately 88% of HCG dieters are able to continue losing weight while using coconut oil.

Coconut Oil, Cocoa, Truvia, and Agave Nectar

This recipe uses agave nectar for additional sweetness. It adds approximately 10 calories to the batch. It is considered a low glycemic sweetener (approx. 32 on the scale), and several HCG dieters have had success using it in their batches of chocolate.

Ingredients:

2 Tbl. coconut oil

1 Tbl. cocoa (15 calories)

1 packet of Truvia

1/4 tsp. Agave Nectar (5 calories)

Place a tablespoon of cocoa into your empty container and break up the big chunks of cocoa with a knife or spoon. Using a separate container (I used a measuring cup), melt two tablespoons of coconut oil in the microwave. This only took me (2) 5 second intervals.

In a separate container, add one packet of Truvia and 1 tsp of HOT water. Stir until dissolved. If the Truvia isn’t completely dissolved, warm in the microwave for 5-10 seconds and stir again. This is an important step. If the Truvia has not been dissolved, your chocolate bark will turn out grainy.

Add the truvia/water mixture and 1/4 tsp. of agave nectar to the coconut oil. It will sink into the bottom of the container. Stir as best as you can. Pour the coconut oil mixture into the cocoa while stirring with a whisk. Mix completely until your coconut mixture is a smooth consistency.

Your chocolate bark is ready to be refrigerated. Refrigerate about an hour to harden. Once it has hardened, use a knife to cut around the perimeter of the chocolate bark. Flip over and pop out onto a plate.

Break your chocolate bark in half, and it’s now ready to eat! If you are using coconut oil for the first time on Phase 2, eat half of the bark in one day (1 Tbl. of coconut oil) to see how your body reacts. Enjoy!
