Applesauce-Nut Bread
1-1/2 cups all purpose flour
1/2 cup wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 cup granulated sugar
1 cup unsweetened applesauce
3 tablespoons vegetable oil
2 egg whites
1 large egg
1 tablespoon brandy or orange juice
1 teaspoon grated lemon peel
1 small apple, peeled, cored, and coarsely chopped (1 cup)
1/4 cup finely chopped walnuts
Preheat oven to 350 degrees F. Spray a 9 x 5 inch loaf pan with
vegetable cooking spray.
In a medium bowl, combine all purpose flour, whole wheat flour,
baking soda, baking powder, cinnamon, salt, and cloves. Mix
well.
In a large bowl, combine sugar, applesauce, oil, egg whites,
egg, brandy, and lemon peel. Mix well. Add flour mixture,
stirring, until just combined. Do not over mix. Stir in apple
and nuts. Scrape batter into prepared pan.
Bake bread until top is golden and toothpick inserted in center
comes out clean, about 1 hour. Place pan on a wire rack and cool
for 10 minutes. Turn loaf out onto rack to cool completely.
