Basic Omelet

Basic Omelet
2 eggs
1 tablespoon chives
1 tablespoon fresh parsley, chopped
1/8 teaspoon salt
1 tablespoon heavy cream
1 tablespoon butter
1 pinch freshly ground pepper

Combine all ingredients and beat lightly. Melt butter in non-stick omelet pan. After foam subsides, pour egg mixture into pan. Cook without stirring for about 1 to 2 minutes until sides and bottom are set but center is still wet. Carefully flip one side of omelet on top of other side to form a half moon. Slide onto plate and serve.
